So often when faced with  a plethora of foods, side dishes face being swept aside as the main dish struts down the table to take the spotlight. It is an outrageous injustice which continues to plague the mealtime hierarchy! 

Just like the supportive hockey winger or the often underrated tennis ball boy, without these supportive players the main star wouldn't be half as shiny and this recipe I am giving you now will really kick your summer BBQ up a notch!

I actually got the idea for this salsa after trying a similar one at my (ex)Boss' place and served it alongside the various meats and salads at Christmas lunch. Its both tart and sweet and provides a smack of freshness which can cut through the often rich and heavy main dishes at your summer feast (though I could have just eaten it by itself and been totally satisfied!).

Mango, Kiwi and Lime Summer Salsa 

 

2 ripe mangos, flesh removed and diced into 2cm cubes
4 fresh kiwi fruit, peeled and diced
Zest and juice of a lime
Handfulof fresh corriander, roughly torn


Combine all ingredients in a bowl and serve!
